Vegan syrniki

The tofu pancakes are juicy, fluffy and so delicious. They are a vegan version of the popular Russian, Ukrainian and Belarusian syrniki or tvoroshniki. With this recipe, you can make the vegan syrniki quickly and easily with just a few purely plant-based ingredients.

Ingredients

  • 200 g natural tofu
  • 1 very ripe banana
  • 50 g soy yoghurt
  • approx. 50 g rice flour
  • 1/4 tsp baking powder
  • 1 pinch of ground vanilla bean
  • 2 tbsp coconut oil for frying

Instructions

  • Pat natural tofu dry, cut it into large pieces and squeeze each piece of tofu a little with a straining cloth or tea towel to remove the excess liquid.
  • Finely chop the tofu with your hands and place it in a mixing bowl.
  • Mash peeled banana with a fork and add it to the tofu.
  • Add soy yoghurt and vanilla and mix.
  • Add baking powder and rice flour and mix to a homogeneous, soft, malleable mass.
  • Form small flattened patties from the tofu mixture.
  • Place coconut oil in a large pan and melt over a medium heat.
  • Fry the vegan syrniki in the pan over a medium heat until golden yellow to golden brown on both sides.

Notes

  • Squeeze the tofu a little and pat it dry thoroughly. This way you won't need as much flour.
  • The amount of rice flour specified may vary. If your tofu mixture is too mushy, add a little more flour. However, remember that the less flour you use, the tastier the vegan syrniki will turn out.
  • You can add some raisins to the tofu mixture.
