The rice patties with zucchini taste juicy on the inside, have a slightly crispy thin crust and are incredibly delicious. They also contain no eggs or other animal ingredients. You can make vegan rice fritters at home with this recipe.

Ingredients
150ground grain rice
300mlwaterfor cooking rice
300gzucchini
2onionsmedium
50gflour
1tsppaprika powder
1/4tspground cumin
1/2tspblack pepper
saltto taste
vegetable oil for frying
Instructions
Cook round grain rice in salted water and leave to cool thoroughly so that it becomes firm and sticky.
Peel and chop onions, fry in 2 tbsp vegetable oil until golden brown and leave to cool.
Grate zucchinis with a coarse grater, add 1/2 tsp salt, stir and leave the vegetables to infuse for 10 minutes.
Squeeze the excess liquid out of the zucchini mixture thoroughly using a cheese cloth and add the zucchini to the rice.
Add the fried onions, paprika powder, cumin, black pepper and possibly salt to the rice zucchini mixture and stir to combine.
Add flour and stir to form a firm, sticky mixture.
Pour some vegetable oil into a frying pan and heat over a medium heat.
Add a heaped tablespoon of rice zucchini mixture per patty to the pan, flatten slightly and fry the rice patties over a medium heat until golden brown on both sides.
Drain them briefly on kitchen paper immediately after frying and serve.
Notes
You can cook the rice for the patties the day before, leave to cool and store in the fridge overnight.
You can cook the rice in vegetable stock instead of water.
Squeeze the juice out of the zucchini thoroughly so that the vegan fritters don't fall apart.
Season the zucchini rice fritters with any spices you like.
You can also shape the fritters from the rice mixture using your hands. It is best to moisten your hands lightly with water every now and then.
The recipe also makes it easy to use up leftover pre-cooked rice.
The time for the rice to cool is not included in the preparation time.
