Homemade fruit powders and vegetable powders

Homemade dried fruit and vegetable powders add variety of taste and color to your dishes. They add freshness and color to your plate. With this recipe, you can make your own fruit powder or vegetable powder from just one ingredient and use it in a variety of ways.

  • any fresh fruits (berries)

  • any fresh vegetables

Instructions

Preparation of fruit powders

  • Wash fruits or berries and pat them dry thoroughly. Peel and deseed them as required. For example, you can use organic oranges, organic mandarins and organic lemons with the peel on.
  • Cut the fruits into very thin slices or very small pieces. You can leave raspberries, blueberries or currants whole.
  • Spread the pieces of the fruits or the whole berries on several baking trays and place them in the oven.
  • Dry the fruits at 176 °F (80 °C) for approx. 12 - 24 hours until they are completely dry and crispy. Open the oven door briefly several times, especially during the first few hours of drying, to allow the moisture to escape and turn the fruit pieces if necessary.
  • Then leave the fruits to cool completely.
  • Put them in a blender and puree them into a fine powder. You can then pass the powder through a fine sieve as required.
  • Pack the homemade fruit powder in an airtight container, for example in a tightly sealed glass jar, and store it in a dark and cool place.

  • Wash vegetables and pat them dry thoroughly. Peel and deseed them as required.
  • Cut the vegetables into very thin slices, chop them into small pieces or grate them using a coarse grater.
  • Spread the prepared vegetables on several baking trays and place them in the oven.
  • Dry the vegetables at 176 °F (80 °C) for approx. 12 - 24 hours until they are completely dry and crispy. Open the oven door briefly several times, especially during the first few hours of drying, to allow the moisture to escape and turn the vegetables over if necessary.
  • Then leave the vegetables to cool completely.
  • Put them in a blender and grind to a fine powder. You can then pass the powder through a fine sieve as required.
  • Pack the homemade vegetable powder in an airtight container, for example in a tightly sealed glass jar, and store it in a dark and cool place.

Notes

  • To ensure that your vegetable or fruit powder retains its bright color and does not become too dark, you should not set the oven temperature too high. This will also preserve more vitamins.
  • The drying time can vary greatly depending on the type of fruits and vegetables.
  • The less moisture the fruits or vegetables contain, the faster they will dry.
  • The smaller you cut the fruits or vegetables, the shorter the drying time.
  • Instead of the oven, you can dry the fruits and vegetables in a dehydrator.
