The cauliflower sauce tastes incredibly creamy, contains only plant-based ingredients and is healthy. It is also very quick and easy to prepare with this recipe. The cauliflower sauce goes perfectly with pasta, but also with potatoes, rice, vegan fritters, vegetables or flatbread.

Ingredients
300gcauliflower florets
approx. 150mlsoy milk(or other plant milk)
2tbspyeast flakes
1onionmedium
2cloves ofgarlic
salt
black pepper
vegetable stock for cooking cauliflower
vegetable oil for frying
Instructions
Cook cauliflower florets in plenty of vegetable stock for approx. 10 minutes until soft.
Peel and finely chop onion and garlic.
Pour some vegetable oil into a pan and fry the onion and garlic until translucent.
Remove the cauliflower florets from the vegetable stock with a slotted spoon and put them in a blender.
Add soy milk, yeast flakes and the onion and garlic mixture to the cauliflower in the blender and puree everything to a creamy sauce.
Season the cauliflower sauce to taste with salt and black pepper.
If necessary, you can thin the cauliflower sauce to the desired consistency with more soy milk or the leftover vegetable stock.
Serve the cauliflower sauce with cooked noodles of your choice.
Notes
Instead of cooking the cauliflower in vegetable stock, you can also cook it in salted water. Then use more different spices to season the sauce itself.
Adjust the amount of soy milk depending on the desired consistency of the sauce.
You can flavor the sauce with any herbs, spices or lemon juice.
