Apple muffins

The muffins with apples taste incredibly fruity, moist, fluffy, soft and so delicious. Honey gives them a particularly delicate aroma. The apple muffins also contain no sugar and are very easy to make with this recipe.

Ingredients

  • 3 apples medium-sized
  • 100 g honey
  • 100 g butter room warm
  • 2 eggs
  • 170 g flour
  • 6 g baking soda
  • 2 tbsp lemon juice freshly squeezed
  • 1 pinch of salt
  • butter to grease the baking tin
  • flour for dusting the baking tin

Instructions

  • Grease the muffin baking tin with butter and dust with flour, tapping off the excess flour. Alternatively, you can line it with paper muffin cases.
  • Pour freshly squeezed lemon juice into a mixing bowl.
  • Core apples and cut them into small cubes, adding them to the lemon juice in batches and mixing gently each time. This will prevent the apple pieces from turning brown.
  • Beat eggs, honey and salt into a light, fluffy mixture.
  • Add soft butter cut into pieces and mix briefly.
  • Mix flour with baking soda.
  • Add the flour mixture to the honey mixture and mix briefly but vigorously to form a thick batter.
  • Fold the apple pieces into the batter.
  • Divide the batter between the muffin tins so that they are almost full.
  • Bake the muffins with apples in a preheated oven at 356 °F (180 °C) for approx. 15 minutes.
  • Leave the apple muffins to cool in the baking tin and then take them out.

Notes

  • Use juicy, crunchy and tasty apples for the recipe.
  • Use aromatic, high-quality honey for the batter.
  • Only stir the batter briefly until it reaches a homogeneous consistency and never for too long. Otherwise the apple muffins could taste rubbery and not fluffy.
  • You can also refine the batter with vanilla, cinnamon or lemon zest.
  • Do not bake the muffins with apples longer than necessary so that they taste moist and not dry. Test them with a skewer to check whether they are done baking.
