Aromatic, sweet, fresh strawberries wrapped in the tender, thin dough – that’s what the strawberry vareniki are made of. They taste heavenly fruity, juicy and summery. You can make the small cooked dumplings quickly and easily. A detailed strawberry vareniki recipe with exact quantities and step-by-step instructions can be found below.
Summer classic of Slavic cuisine
Even though vareniki belong to the Ukrainian national food, they are common in many countries of the former Soviet Union. While the potato vareniki are popular all year round, the vareniki with strawberries are more of a summer dish. Having harvested strawberries from own garden, people prepare these sweet dumplings with them, in addition to kompot and strawberry jam.
By the way, you can fill them with other fruits instead of strawberries. For example, try the blueberry vareniki.
The secret of the dough
The dough for my sweet dumplings is prepared with hot water, just like for vegetarian pelmeni. This gives it a great consistency. It is elastic and soft, but not sticky. In addition, it does not crack and is easy to work with. After cooking, this vareniki dough tastes very tender.
Strawberry filling sugar free
I added a little sugar to the strawberry filling. Where it was previously mixed with a small amount of cornstarch. I did it similarly in the recipe for piroshki with apricots.
The starch binds the fruit juice in the dough. Don’t overdo it, though, or the dumplings might taste bitter.
Alternatively, you can make the vareniki sugar free. Then fill the dough only with strawberry pieces.
How to serve strawberry vareniki?
I served my strawberry vareniki with a strawberry sauce. It makes them taste even more fruity and summery.
Strawberry syrup also goes well with the fruity dumplings. It gives them even more strawberry flavor and sweetness.
Moreover, you can serve the strawberry vareniki with a vanilla sauce.
In Slavic countries, people like to eat the summer dumplings sprinkled with sugar or served with sour cream.
You should eat the strawberry vareniki immediately after cooking. If you leave them for a long time, they will dry out and stick together.
Freeze in stock
Freeze the strawberry vareniki that are not cooked immediately. This way you can enjoy the summer dumplings even in winter.
To do this, spread them separately on a cutting board and put them in the freezer. Once the dumplings are frozen through after a few hours, you can transfer them to a freezer bag. Similarly, freeze vegan gnocchi.
You don’t need to thaw frozen vareniki before cooking. You just add them directly to boiling water.

Vegan strawberry vareniki recipe
The strawberry vareniki recipe, which you can find here at the end of the post in the recipe box, is vegan. The dough for it consists of only four ingredients, namely water, flour, vegetable oil and salt. For the filling, you’ll need fresh strawberries, maybe some sugar and a small amount of cornstarch to bind the liquid in the filling.
Besides, the summer vareniki recipe is very simple. First, knead all the ingredients into an elastic dough and let it rest for a while. Meanwhile, cut strawberries into pieces.
Now form small crescent-shaped dumplings and fill them with strawberry pieces and a little sugar starch mixture.
Then boil them in plenty of water for about 5 minutes. And you are ready to serve the summery vareniki with strawberries.
How to make strawberry vareniki: tips and tricks
- The vareniki dough must have a firm and elastic consistency. It becomes elastic only after kneading. So knead the dough thoroughly.
- If your dough is too dry, add a little more water. If it is sticky, add more flour.
- Depending on your taste, you can omit sugar and therefore cornstarch for the filling.
- Tape the sides of the dumplings together as tightly as possible to prevent them from rising during cooking.
- You can use a dumpling maker to shape the vareniki.

Strawberry vareniki
Ingredients
for the dough
- 180 ml boiling water
- 300 g flour**
- 20 ml vegetable oil
- 1/2 tsp salt
for the filling
- 250 g strawberries
- 30 g sugar** or to taste
- 1/2 tsp cornstarch**
for cooking
- water
- 1 pinch of salt
Instructions
Preparation of the dough
- Mix flour with salt and vegetable oil.
- Add boiling water and mix the mixture first with a wooden spoon. Once it is no longer hot, knead it with your hands into a firm dough.
- Knead the dough for 5 - 7 minutes and let it rest covered for 20 minutes.
Preparation of the filling
- Mix sugar with cornstarch.
- Cut strawberries into small cubes.
Preparation of the strawberry vareniki
- Roll out the dough about 2 mm thick and cut out circles from the dough with a drinking glass or a round cookie cutter.
- Put about 1/4 tsp of sugar cornstarch mixture in the center of each dough circle, place some strawberry cubes on it, close each dough circle into a semicircle and stick the edges firmly together.
Cooking the vareniki with strawberries
- In a large saucepan, bring plenty of salted water to a boil.
- Add the strawberry vareniki one at a time to the boiling water, stir gently with a wooden spoon, bring to a boil and simmer for about 5 minutes.
- Remove the vareniki from the water with a slotted spoon and serve.
