For the recipe you need
- rice, of course – I had long-grain rice,
- zucchini,
- feta cheese,
- eggs,
- milk,
- grated cheese,
- spring onion
- and salt and pepper to taste.
Zucchini rice casserole: here’s how to make it (Check out the detailed recipe below.)
- First, cook rice according to package directions. In the meantime, grate zucchini coarsely, shred feta cheese and finely chop spring onion. Then mix the ingredients in the baking dish.
- Now whisk eggs and milk until foamy, season with salt and pepper, pour over the rice mixture and spread grated cheese on top.
- Then bake the hearty casserole at 180 °C for about 35 minutes. Done!

Ingredients
- 200 g rice (e.g. long grain rice)
- 350 g zucchini
- 200 g feta cheese
- 2 eggs
- 100 ml milk
- 100 g grated cheese
- 1 spring onion
- salt
- pepper
Instructions
- Cook rice in salted water according to package instructions.
- Grate zucchini coarsely, crush feta cheese into small pieces and chop spring onion.
- Put cooked rice, zucchini, feta cheese and spring onion in the casserole dish and mix everything together.
- Beat eggs and milk, season with salt and pepper and pour over the rice mixture in the casserole dish.
- Sprinkle the rice mixture with grated cheese and bake in a preheated oven at 180 °C top and bottom heat for about 35 minutes.
