A fancy eye-catcher and so delicious is the Russian chocolate salami. You can make it at home without baking. It is ideal for a coffee round, for snacking or for giving as a gift. What is chocolate sausage?
Chocolate sausage is a popular no bake dessert of Russian cuisine, made with butter cookies, similar to sweet kartoshka made from cookies. Due to its sausage-like shape, it got the appropriate name.
There are several recipes for Russian chocolate salami. Classically, it consists of cookies, cocoa, milk, butter and sugar. Often nuts are added. In some recipes, sweetened condensed milk is used instead of milk and sugar.
By the way, the Russian chocolate sausage reminds you a bit of the German Kalter Hund.
Replace or add ingredients
You can experiment with the ingredients for the chocolate salami as you like.
Cookies
Instead of butter cookies go, for example, different cookies. The recipe is therefore a great way to use the leftover Christmas cookies.
Nuts
I made my chocolate sausage with walnuts, just like the kartoshka made from rusk. Alternatively, you can use other nuts, such as almonds. If you like the dessert nut-free, just leave out the nuts.
The chocolate salami can also be prepared with dried fruit, candied lemon peel and candied orange peel, chopped chocolate or chocolate drops.
Spices and flavors
To refine the chocolate sausage, you can still use a shot of rum, liqueur or cherry brandy. Vanilla or cinnamon are also suitable for this purpose.
How to serve and store chocolate salami?
Russian chocolate sausage is a favorite to serve with coffee or tea instead of cake. But it is also perfect as a sweet treat to snack on between meals, just like the Dominosteine.
Plus, the sweet sausage is a great change from the classic Christmas cookies during Advent. Fill your cookie plate with it, in addition to angel eyes cookies, snowflake cookies, and vanilla crescents.
Store the chocolate salami in the refrigerator – preferably wrapped in an airtight container so it doesn’t dry out. You can also freeze it – either whole or in pieces separated with baking paper, like the vegan chocolate zucchini bread.
Fancy kitchen gift
The chocolate sausage is ideal for giving as a gift, for example at Christmas, just like zefir or chocolate peanut clusters. Wrap it in sandwich paper and place a pretty ribbon on top. Your sweet gift for a sweet tooth is ready.

Chocolate sausage
Ingredients
- 350 g butter cookies
- 180 g butter cut into pieces
- 100 ml milk
- 130 g sugar
- 100 g walnut kernels
- 40 g cocoa powder
for dusting
- powdered sugar
Instructions
- Toast walnut kernels in a pan or oven, let cool and chop coarsely.
- Add milk, sugar and cocoa powder to a small, thick-bottomed saucepan and stir thoroughly.
- Place the saucepan on the stove and bring the cocoa mixture to a boil while stirring.
- Cook the cocoa mixture, stirring, for about 1 minute and remove from heat.
- Immediately add butter cut into pieces to the hot cocoa mixture and stir until butter is melted.
- Crumble half of butter cookies finely and the other half coarsely.
- Add the coarsely and finely crumbled butter cookies and the chopped walnuts to the cocoa mixture and mix to make a sticky chocolate mixture.
- Spread a double layer of plastic wrap on the work surface, spread the chocolate mixture lengthwise on one side of the wrap, form it into a "sausage" about Ø 5 cm thick and wrap it tightly with the plastic wrap, tying the ends tightly.
- Place the chocolate sausage in the refrigerator for about 3 hours or in the freezer for about 1 hour, until it is firm to the touch, and then remove the cling film.
- Dust the chocolate salami with powdered sugar and cut into slices.
