With this cookie recipe, you can decide whether to leave the cookies as they are after baking, as single cookies, or make them into sandwich cookies. For this you glue two cone halves together with a filling and get cookies that look like real cones.

You can fill the sandwich cookies with chocolate, for example. Also some cream or simply solid jam are suitable for it.

According to the recipe below I got 30 cookies. If you make sandwich cookies out of it, you get 15 of them.

Chocolate pine cone cookies

Ingredients
  

  • 200 g butter (room temperature)
  • 180 g powdered sugar
  • 2 eggs
  • 100 ml vegetable oil (neutral in taste)
  • 50 g cocoa powder
  • approx. 600 g flour
  • 18 g baking powder
  • 1 pinch of salt

for the filling (alternative)

  • chocolate (melted)

for dusting

  • powdered sugar

Instructions
 

  • Mix butter, powdered sugar and salt.
  • Add vegetable oil and eggs and mix until homogeneous.
  • Add cocoa powder and mix to a homogeneous chocolate mass.
  • Mix flour with baking powder, add it in portions to the chocolate mass and knead it quickly and briefly to a very soft dough. Put the dough in the freezer for 10 minutes.
  • Take the dough out of the freezer in portions and make cookies in the shape of cones. Spread them on a baking sheet lined with parchment paper and cut them into a light lattice shape.
  • Bake the chocolate cookies in a preheated oven at 180 °C top and bottom heat for about 12 minutes and let them cool.
  • Sprinkle the chocolate pine cone cookies lightly with powdered sugar. Alternatively, you can stick two cookies together with melted chocolate beforehand, so that you get sandwich cookies.

  • The amount of flour given may vary. Add flour in batches until the dough reaches the right consistency. It should be very soft, not mushy, and not too firm.
