Chocolate covered almonds
Ingredients
- 200 g chocolate vegan
- 150 g almonds raw
- 60 g sugar
- 30 ml water
- 1 tsp cocoa powder
- 1 pinch of salt
Instructions
- Put sugar, salt and water in a non-stick pan and heat over a medium heat, stirring with a wooden spoon, until the sugar has dissolved and the mixture just begins to boil.
- Add almonds to the sugar mixture and heat over a medium heat, stirring constantly, until the liquid evaporates and a dry crust forms to coat the almonds.
- Continue to heat the almonds, stirring, until the sugar caramelizes and the dark brown caramel coats each almond.
- Place the hot almonds on a baking sheet lined with baking paper, separate them as much as possible with a wooden spoon or a fork and leave them to cool slightly.
- Then use your hands to separate each almond from the others and leave the candied almonds to cool completely.
- Melt chocolate over a water bath.
- Place the candied almonds in a large glass mixing bowl.
- Add 2 teaspoons of melted chocolate to the almonds and stir with a silicone spatula until the chocolate sets, coats each almond and the almonds no longer stick together (it took me about 5 minutes).
- Add 1 teaspoon of melted chocolate to the almonds and stir again until the chocolate sets (this is a little quicker than the first time). Repeat the process about 13 more times or until the chocolate is used up.
- Add cocoa powder to the almonds and stir until the chocolate almonds are coated in cocoa powder.
