These cake pops taste moist, soft and heavenly delicious. You can make them yourself in a flash with just three ingredients and no baking. Whether for the candy bar at a party or simply for snacking at home – the sweet, colorfully decorated cakes styled as lollipops are guaranteed not to be resisted. What are cake pops?
Cake pops are mini round chocolate covered cakes on sticks, usually made with sponge cake and any kind of cream. There are very many cake pop recipes with different cake doughs and equally different creams. The mini cakes on sticks can be compared to the Russian mini cake kartoshka. The only difference is that cake pops are attached to a stick and covered with chocolate.
Nutty, chocolatey or classic?
Do you like your mini cakes on sticks with vanilla, chocolate or nut flavor? I chose the classic option and made the cakes styled as lollipops with an ordinary vanilla sponge cake, or rather with leftover sponge cake after making various mini cakes, which I didn’t want to throw away. I also had a small amount of chocolate sponge cake leftovers with nuts, which made my chocolate cake pops with nut flavor.
Just about any sponge cake will work for the recipe – classic vanilla sponge cake, chocolate sponge cake, sponge cake with nuts, or even the sponge cake for Red Velvet Cake. You can either make it especially for the mini cakes on sticks or use leftover sponge cake that you may already have at home.
Even more cream ideas
As for the cream for cake pops, you can also let your imagination run wild and experiment with different flavors. I simply used cream cheese as the cream for my mini cakes on sticks. This makes the cakes styled as lollipops taste moist, not too sweet and very tasty. In addition, the making with cream cheese goes lightning fast. But you can make the cake pops with another cream to your taste. A lot of creams are suitable for this. Here are a few ideas for you:
- vanilla cream,
- buttercream – as a quick alternative, simply whip sweetened condensed milk and butter in a ratio of about 1:1,
- ganache – cream made with chocolate and cream,
- whipped cream,
- chocolate spread,
- caramel sauce – for caramel cake pops,
- sweetened condensed milk or caramelized sweetened condensed milk.
Instead of using a cream, you can make fruity mini cakes on sticks with
- fruit juice,
- fruit syrup,
- jam
and a small amount of softened butter for each.
White or dark chocolate, chocolate or chocolate glaze?
You like dark chocolate? Then use it to frost your cakes styled as lollipops. Milk chocolate works just as well for this. I made my cake pops with white chocolate. You can simply melt chocolate for it or make a chocolate glaze with melted chocolate and a small amount of butter, cream, coconut oil or vegetable oil.
How to decorate cake pops?
When decorating the mini cakes on sticks, there are no limits to your imagination. After covering them with chocolate or glaze, you can decorate them with, among other things
- colorful sugar sprinkles, sugar flowers, sugar hearts, sugar pearls or colorful sugar,
- nuts,
- coconut flakes.
You can also decorate the cakes styled as lollipops very nicely with a combination of white and dark chocolate. You can also color white chocolate glaze with different food coloring and then use it to coat the cakes styled as lollipops.
I had pink, rose and purple colored meringue left over at home, chopped it up and sprinkled it on my cake pops after frosting them with white chocolate.
Great way to use up leftover sponge cake
Making cake pops yourself is a great way to utilize all the leftover sponge cake you have at home. For example, after making the mini chocolate mousse cake “Eva”, such leftover dough remains. Even a sponge cake that may have been lying around for a few days and has become a bit dry can be made into the cakes styled as lollipops. In this case you only need more cream cheese or another cream, because such a sponge cake is no longer as moist as the one directly after baking.
For wedding or children’s birthday party
With their fancy look, cake pops are of course ideal for a party, also because they can be eaten directly from the hand. They are an integral part of any candy bar – the candy buffet at parties. Especially at weddings, baby showers and children’s birthday parties, cakes styled as lollipops are very popular. They also make a nice homemade gift for anyone with a sweet tooth. Depending on the occasion for which you make the mini cakes on sticks, you can make them in different flavors and decorate them accordingly.
Lollipop sticks, cake pops maker and co.
Actually, the only tool you need to make cake pops are sticks. Ordinary wooden skewers, popsicle sticks, straws are just as suitable as paper lollipop sticks. In addition, however, there are a lot of tools available in stores that make DIY cakes styled as lollipops easier. These include cake pop baking pans, cake pop makers or even entire cake lollipop sets.

Easy cake pop recipe with 3 ingredients
For this cake pop recipe you only need three ingredients. You can whip up these popular mini cakes on sticks in a flash. You need
- sponge cake or sponge cake scraps,
- cream cheese
- and chocolate – white, milk or dark chocolate.
How to make cake pops: here’s how (Check out the detailed recipe below.)
- First, crush sponge cake into fine crumbs. Then add cream cheese and knead it into a malleable mass.
- Now form small balls from the sponge mixture and chill them briefly. Then put lollipop sticks dipped in melted chocolate into the balls and chill them again briefly.
- Then dip the sponge cake balls in melted chocolate and let them dry in the refrigerator. Done!
How to make cake pops: tips and tricks
- Depending on how moist or dry your sponge cake is, you may need less or more cream cheese than indicated here in the recipe. The mixture of sponge cake and cream cheese must be easy to shape, not dry and not too moist, so that you can easily form balls that keep their shape and do not fall apart.
- To get balls of the same size, you can use a scale.
- Instead of cream cheese, you can make the cakes styled as lollipops with any other cream you like. (See my notes on this above.)
- You can use any chocolate or chocolate glaze to frost the balls.
- Decorate the mini cakes on sticks any way you like.
- Store cake pops in the refrigerator. Depending on the cream you used for them, the shelf life of the cakes styled as lollipops can vary greatly.

Equipment
- 20 lollipop sticks
Ingredients
- 350 g sponge cake (any)
- approx. 175 g cream cheese
- 200 g chocolate (any)
Instructions
- Crush sponge cake into fine crumbs.
- Gradually add cream cheese in portions and knead to form a malleable mass.
- Form 20 small balls from the sponge mixture and chill them for about 15 minutes.
- Melt chocolate over hot water bath.
- Dip one end of lollipop sticks about 1 cm deep into the melted chocolate and stick each end into a sponge ball. Refrigerate the balls again for about 20 minutes.
- Dip the sponge balls into the melted chocolate, letting the excess chocolate drip off as you do so, decorate the cake pops as desired, and refrigerate until the chocolate has set.
Notes
- Depending on how moist or dry the sponge cake is, you may need less or more cream cheese than the recipe calls for. The mixture of sponge cake and cream cheese must be easy to shape, not dry and not too moist, so that you can easily form balls from it that will keep their shape and not fall apart.
